 Herb-Roasted Turkey Breast

  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • Salt and pepper to taste

Instructions:

  2. In a small bowl, combine olive oil, garlic, rosemary, thyme, sage, salt, and pepper.
  3. Rub the mixture all over the turkey breast.

  1. In a large bowl, combine cooked quinoa, roasted butternut squash, dried cranberries, chopped pecans, baby spinach, and feta cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.

Dessert

Baked Apples with Cinnamon and Walnuts

  • 4 large apples, cored
  • 1/4 cup walnuts, chopped
  • 2 tablespoons raisins
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1/4 cup water

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix walnuts, raisins, cinnamon, and honey.
  3. Stuff each apple with the walnut mixture.
  4. Place apples in a baking dish and add water to the bottom of the dish.
  5. Bake for 30-35 minutes, until apples are tender.

2. Dark Chocolate Avocado Mousse

  • 2 ripe avocados
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt
